Week 7

I did go back down to 142- it seems to go up and down- but I have not gone below 142....yet... but I am determined!

I didn't keep track of everything I ate this week but here are some of my favorites!

Taco Salad- without chips- super good!
Tortilla soup- from allrecipes.com
Meatballs in spaghetti sauce- with salad and green beans

I really need to exercise more! That will be my goal for week 8!

Week 6

I am feeling great! I love not feeling shaky when I'm hungry- I simply just feel hungry. I used to get shaky and start eating what ever was in sight and because I have gotten my blood sugars under control, when I feel hungry I can make better decisions. This is great!
I am going to start phase 2- the book says if you want to continue to loose weight that moving to phase 2 is what needs to happen-- we will see what happens!

Sunday March 23 Happy Easter!

I took the day off- I ate candy but did pretty good with the meals.

Monday March 24 still at 142.5!
Walked on treadmill today for 30 minutes- I didn't want to but I made myself do it- I turned on the computer and watched Samantha Who- it was 30 minutes long so I watched it while walking on the treadmill.
  • Breakfast- cereal with milk- All Bran Strawberry Medley - it has lots of fiber and tastes good.
  • Snack- half of a fresh pear and a hard boiled egg
  • Lunch- chopped salad- hard boiled egg, bacon bits, avocado with ranch
  • Snack-
  • Dinner- Salsa Chicken from SB Diet book - was very good!
Tuesday March 25
  • Breakfast- cereal with milk
  • Snack - hard boiled egg
  • Lunch- same salad as yesterday
  • Snack- string cheese
  • Dinner - chili with cheese
  • Snack- yogurt- light & fit
Wednesday March 26
I'm feeling a little cold come on and (what the heck!) I gained a pound!

  • Breakfast - 1/2 cup cereal with milk
  • Snack- hard boiled egg
  • Lunch - left over chili
  • Snack- fresh pear with laughing cow cheese
  • Dinner- Chicken Asian packets from SB Diet book- (these were not very good) with 1/4 cup brown rice
  • Dessert- sugar free cheesecake pudding with cool whip the zero calorie kind- yum!
Thursday March 27
Oh no! I gain yet another pound! I'm back at 145! I don't know what's going on- maybe my body really does not like carbs? Max is loosing more weight now on phase 2 so- I'm boggled- I'll stay on phase 2 for the rest of the week- maybe it's just hormones or something?
  • Breakfast- hard boiled egg
  • Snack- string cheese
  • Lunch- skipped- I was feeling sick
  • Snack- celery with laughing cow cheese and some pistachios
  • Dinner- An Easy Garlic Chicken from allrecipes.com with chopped salad and green beans

Week 5

Monday March 17 still at 144-

  • Breakfast- egg casserole
  • Snack- string cheese
  • lunch- salad with tuna, tomatoes, sunflower seeds and ranch
  • snack- cottage cheese

  • snack- ricotta creme

Tuesday March 18 Yeah down -.5! 143.5

  • Breakfast- string cheese- I was in a hurry
  • Snack- nuts
  • Lunch- tuna, tomato, sunflower seeds and ranch salad
  • Snack- cottage cheese with splenda and cinnamon
  • Dinner- pot roast from Kalyn's kitchen with green beans and salad with tomatoes, bacon bits and sunflower seeds
  • Snack- ricotta creme
Wednesday March 19 - down another .5! I'm now at 143!

  • Breakfast- cottage cheese with splenda and cinnamon
  • Snack- nuts
  • Lunch- left over chicken with salad - it was so good - from the "A Good Easy Garlic Chicken" it tasted like a salad from a restaurant
  • Snack- string cheese
  • Dinner- chili
  • Snack- ricotta cream
Thursday March 20

  • Breakfast- cottage cheese
  • Snack- forgot
  • Lunch- lettuce wrapped cheese burger from Carl's Jr - as my kids were playing at Carl's Jr. they left their fries.... I kept eating one here and there until I just threw them away- I wanted to eat all of them!
  • Snack- forgot
  • Dinner- meatballs and salad- we love to put bacon bits and sunflower seeds on our salad - I only had a little bit because I was going to enrichment at 7
  • Enrichment dinner- chicken cordon bleu, salad, roll, and....... carrot cake- I know, I caved in!
Friday March 21
  • Breakfast- cottage cheese
  • Snack- string cheese
  • Lunch- tuna/mayo with salad and sunflower seeds
  • Snack- 30 pistachios
  • Dinner- grilled hamburger with pickles and all the fixins with lettuce
  • Snack- ricotta cream
Saturday March 22 - Down another .5! 142.5!
  • Breakfast- scrambled eggs and sugar free orange juice -(like crystal light)
  • Snack- string cheese
  • Lunch- a leftover burger
  • Snack- forgot
  • Dinner- grilled chicken and salad

Week 4

Monday-Tuesday
Well, the weekend went so so... We had a family dinner and Maren's birthday so I held myself back from the white rice but... not the rolls or cake or ice cream. Yes, I fell off the wagon! I'm 2 pounds heavier (147)but it was worth it. So I'm back on phase 1 (I never left it) and I'll stay on it until I'm ready. Yesterday I was good until dinner - I had pizza and cake. Today was hard! The kids were eating leftover cake and I lost it! I had to have some- usually it wouldn't have bothered me but since I had had it for a couple of days it was really hard. The rest of this week I will be good.

Wednesday March 12
  • Breakfast- Scrambled eggs
  • snack- cottage cheese
  • tuna salad- so good! tuna (the good kind -albacore) mixed with a couple of Tbsp mayo - on top of a bunch of lettuce add some tomato and sunflower seeds and ranch dressing on top - very good and fulfilling
  • snack- celery with laughing cow cheese
  • dinner- chili with cheese on top (from Kalyn's kitchen- except I used leftover roast instead of hamburger) http://kalynskitchen.blogspot.com/

Thursday March 13

  • Breakfast - scrambled eggs
  • snack- string cheese
  • lunch- leftover chili
  • snack- string cheese
  • dinner- cashew chicken- some pre-made stuff from costco
  • snack- cottage cheese with splenda and cinnamon
Friday March 14
  • Breakfast - scrambled eggs
  • snack- celery with laughing cow cheese
  • lunch- tuna salad with tomato and sunflower seeds
  • snack- string cheese
  • dinner- pork chops with salad and green beans
  • snack - roasted chickpeas- so good- they taste like the unpopped popcorn kernels
Saturday March 15

  • Breakfast- string cheese (I was in a hurry)
  • snack- skipped
  • lunch- skipped
  • snack- skipped- busy day!
  • dinner- Cafe Rio Salad- I just didn't eat the tortilla
Sunday March 16- so as of this morning I am at 144. It's weird though because I can wear my wedding ring with out a problem- last week it was tight. So even though I haven't lost a ton of weight I'm still losing something!
  • Breakfast- egg casserole - I try to make this once a week - I cut it into squares and in individual bags and put them in the freezer for Max - the recipe is from Kalyn's Kitchen
  • Snack- skipped
  • Lunch- left over chili
  • snack- skipped
  • dinner- family dinner- I just ate what ever and enjoyed myself- I'm sure I'll see the results tomorrow!

Day 19

When I got on the scale this morning first it said 143.5! I couldn't believe it so I stepped on it again and it was at 144.... I tried again and it said 144. So, almost 143.5 I guess?

Weekends are different- there's not a lot of schedule in the day so I try to do my best!

  • Breakfast: Scrambled eggs, bacon
  • Snack: forgot!
  • Lunch: small oriental chicken salad (homemade)
  • Snack: I was out shopping
  • Dinner: Olive Garden- I got the Apricot Chicken- it came with asparagus and broccoli. I ate a few bites of a bread stick and some of the salad.
  • tonight I tried a Hershey's kiss and after I felt kind of yucky- wow only one and my body was like "what is this" - so one was good and I didn't need anymore!

Day 18

Friday
I'm still stuck at 144.5 actually I'm down a half pound from yesterday. I'm not sure if the inches are still coming off- I didn't measure today. So anyway, I'm feeling really good. I bought some Easter candy and wasn't even temped to break into them. WOW that's amazing for me! I always have to test each one out!

  • Breakfast: Scrambled egg
  • Snack: I forgot!
  • Lunch: Leftovers from last night -spaghetti squash
  • Snack: String Cheese and celery with laughing cow cheese
  • Dinner: The Smoke House in Orem- I had a cobb salad and Max had beef brisket it was really good!
It's weird- I don't snack at night anymore?

Day 17

Still stuck at the same weight

Breakfast: Scrambled egg
Snack: string cheese and celery with hummus
Lunch: oriental chicken salad- I made the dressing with splenda instead of sugar - so yummy!
Snack: celery with laughing cow cheese
Dinner: Spaghetti Squash 1 from allrecipes.com

Went to the cycling class tonight

Day 16

Wednesday

Breakfast: scrambled eggs and a V8
Snack: celery with laughing cow cheese (you can buy this at costco)
Lunch: leftover soup
Snack: string cheese
Dinner: Curry Chicken and Broccoli casserole recipe from Kaylyn's Kitchen

Day 15

Tuesday



I think I just did the usual? I've been walking on the treadmill in the morning and I went to a cycling class that night. I've stopped loosing weight.... not sure if it's cause I'm gaining muscle or what.. but I am still loosing inches.

Dinner: chicken and cilantro soup recipe from Kaylyn's kitchen

Day 14

Officially two weeks through! Max and I decided to keep doing phase one until Maren's birthday- then we will enjoy some cake and ice cream.

Today was another crazy day- we were out and about today so I brought some string cheese with me and some pistachios. My kids got pizza at costco for dinner and so I just ate some of the cheese off of one of their left over pieces. I seemed to be fine for the rest of the night.

Day 13

Sunday-

Snack: string cheese

Day 12

We were busy that day so I did the best I could. We went to a Baptism and after went to lunch- I mostly ate salad. Someone brought a really yummy oriental chicken salad so I had lot's of that and some vegies.
